Spider-man and Cat-woman!

Oh, my gosh, I had no idea how cute this shot turned out. This was the first time I'd ever dressed Jordan up, strangely enough (my kids live in costumes, literally!), but she caught on quickly. She meowed and everything.

Nathan was proud of his Bionicle creation, he's trying to make it into the LEGO magazine!

pre-date picture

Jon and I went out for our anniversary tonight. We ate at Outback Steakhouse and ended up sharing a table for a bit with our Pastor David and his lovely wife, who were also on a date! We then aborted our plans to see Teladega Nights and went to the mall in a nearby city to do some shopping (much more enjoyable). You can't tell from this picture, but we really are a happy couple! (perhaps I am too heavy??) We're celebrating our 12th on Sunday...

Garden of eatin'

Aunt Mae-Mae invited us to come pick some fruit and vegetables from her neighbor's garden (thanks again, Mae-Mae!), and the kids had a great time doing it. It was a bit of a learning experience, as well, selecting what was ripe enough. We came home with tomatoes, peppers, cantelopes, pears, corn, a cucumber, and some yellow squash. Nathan and Mychael sampled some muscadines, also. Thank you, Lord, for a nice day.

stayin' cool

We braved the heat on Thursday afternoon and headed to the pool. The kiddie pool was really warm, which is probably why Zach and Jordan opted to snack instead!

recipe of the week

This is basically the Nestle Tollhouse recipe, with a couple of changes:

Best Chocolate Chip Cookies

2 cups all-purpose flour
2 tbsp wheat germ
1 tsp salt
1 tsp baking soda
2 sticks of butter, melted
3/4 cup dark brown sugar
3/4 cup white sugar
1 egg
1 tsp vanilla

Preheat oven to 375 degrees.
Combine first 4 ingredients using a whisk in a medium sized bowl. Combine remaining ingredients in a large bowl, then gradually add flour mixture to the sugar mixture, until thoroughly mixed. Next, add 12 oz. Nestle Tollhouse semisweet morsels. I use parchment paper on a cookie sheet and make 6 giant cookies with each batch. It takes a good 10-12 minutes to bake them, and then cool on a cooling rack another 5 minutes. They turn out crunchy on the outside and chewy in the middle, just like we like them!

I'll go ahead and throw this one in, too, since we had it tonight and it was such a hit:

Mac-n-cheese, Carla Whitt-style

8 oz. elbows macaroni
about 1/2 pound hoop cheese (Steve's Garden Market, Lowes Foods), cut into 1 inch chunks
12 oz evaporated milk
butter
salt and pepper

Preheat oven to 375 degrees.
Coat a pie dish or small casserole with cooking spray. Boil noodles according to directions, drain, and layer half in dish. Make a layer with half the cheese chunks, dot with butter (couple tbsp), salt and pepper. Repeat a layer, then cover with the can of milk. Bake uncovered approximately 30 minutes (good idea to have aluminum foil on lower rack in case bubbles over), stir, and bake an additional 15 or 20 minutes, until real bubbly and somewhat browned.

fun at home (or, waiting on the air conditioner guy)

I took a couple of pics today of Zach and Jordan...Mychael and Nathan have mainly been playing at our neighbor's house, so the little ones are getting a bit more attention than usual. Zach and I hung out in my room until the air conditioner guy came to fix the downstairs air (I have a window unit in my room so we don't have to cool the whole downstairs and basement at night while we're sleeping), it's amazing his imagination. We have every conceivable action figure, but his favorite thing to do is to pretend the little Lincoln Logs are little men. Just above the single groove in the logs where it sort of juts out he calls their "forehead." It's too cute, I just love watching him play. And in the second picture Jordan is having her first bowl of Cookie Crisp, courtesy of the neighbors (sorry, Jon!). I don't allow the kids to have the sugary cereals, and apparently Hunter's mom felt sorry for them and sent a whole box home with them! Mean mommy that I am! Stay cool, everyone...
